Lauki Kofta Curry recipe | How to make bottle gourd kofta curry | Lauki Ke Kofte

Bottle gourd, known as lauki (ghiya) in Hindi and Dudhi in Gujarati, is generally not a popular vegetable in every household but it makes one of the best Indian curries. The kofta curry recipe would be good alternative which is tasty yet healthy and nutritious.



Preparation Time: 10 minutes

Cooking Time: 35 minutes

Serves: 4 serving


Ingredients

 

for Kofta:

  • 1 Medium grated Lauki (bottle gourd/ghiya/doodhi)
  • 5 tablespoons Gram Flour
  • 1/4 teaspoon Turmeric Powder
  • 1 tablespoon Green Chilli, Ginger-Garlic Paste
  • 2 tablespoons finely chopped Onion
  • 1 tablespoon dry Annardana seeds
  • 1 tablespoon coriander seeds
  • Salt to taste
  • 1 tablespoons Coriander leaves finely chopped
  • Oil for deep frying


For Gravy:

  • 2 Medium Tomatoes
  • 2 tablespoons Cashew Nuts, soaked in water for 20 minutes
  • 1/2 theaspoon Cumin Seeds
  • 1 tablespoon  Green Chilli, Ginger-Garlic Paste
  • 2 medium Onions, finely chopped
  • 1 teaspoon Coriander Powder
  • 1/2 teaspoon Red Chilli Powder
  • 1/4 teaspoon Garam Masala Powder
  • 1/4 teaspoon Turmeric Powder
  • 1/4 cup thick Curd (yogurt) (not sour)
  •  Water as per Requirement
  • 2 tablespoons Oil
  • 1 bay leaf / tej patta
  • Salt to taste
  • 1 tsp kasuri methi / dry fenugreek leaves
  • Grated cheese for garnishing
  • Coriander leaves finely chopped for garnishing


How To Make

1. Instructions For Kofta Preparation:

  • Firstly, Peel and grate lauki ,add salt & squeeze well 
  • Squeeze out the water completely and keep that water for making gravy
  • Now add besan, turmeric powder, green chilli ginger garlic paste, salt, finely chopped onion, coriander leaves finely chopped, annardana, coriander seeds
  • Mix well and prepare kofta with the help of corn flour.
  • kofta Coat with corn flour and deep fry.
  • Drain and keep aside.


2. Instructions For Gravy Preparation:

  • Firstly, heat oil and add in cumin and bay leaf.
  • Add finely chopped onion & Green chilli, Garlic ginger paste and cook for 5 minutes
  • After that further add turmeric ,chilli powder, coriander powder and salt.
  • Add tomato paste and sauté well.
  • Add in leftover lauki water and curd.
  • Mix well and boil.
  • Add kasuri methi and garam masala powder.
  • Transfer the gravy to a serving bowl and place lauki kofta.
  • Finally Garnish with Grated Cheese & Finely chopped Coriander leaves

Now it's ready to eat, Serve hot Lauki Kofta Curry with Roti/ Chapati/Naan. Enjoy!!
