Sindhi Koki Recipe

A popular dish from Sindhi Cuisine, Sindhi Koki is a breakfast dish made using wheat flour, Besan, spices, and herbs. Sindhi cuisine  is very similar to Punjabi cuisine and is rich, vibrant, and flavourful. among the variety of dishes that the Sindh cuisine offers, Sindhi Koki is the most popular one. This is not only famous for its amazing taste but also for its texture. Unlike a chapatti or a paratha, that we usually eat, this is not very soft but is meant to be a little crunchy, chewy, and slightly hard. You can serve it for breakfast, lunch, or dinner.



Ingredients
  • 2 cups Wheat Flour
  • 2 tbsp Besan (Gram Flour)
  • 1 cup Onion (Finely Chopped)
  • Salt as per taste
  • 1/2 tsp Turmeric Powder
  • 1 tsp Red Chilli Powder
  • 1 tsp Cumin Seeds
  • 1/2 tsp Carom Seeds(Ajwain)
  • 1 tsp Annardana(Dry Pomegranate Seeds)
  • 1 tbsp Kasuri Methi
  • 1 tsp Green Chillies (Finely Chopped)
  • 2 tbsp Fresh Coriander (Finely Chopped)
  • 3 tbsp Oil (Plus for frying)
How to make Koki:

1. First take a bowl, and Add Wheat flour, Besan, and all the other ingredients and Mix well.

2. Add little water and make a tight dough.

3. Do not knead dough too much, the dough must be stiff.

4. Apply little oil in your palms and over dough too.

5. Divide the dough into 5- 6 equal parts.

6. The amount of dough for Koki is more than that we take for roti or paratha.

7. Dust and roll the dough with rolling pin just flatten the roll but roll must be thick not thin.

8. Slightly roast on both the sides on hot Tawa.

9. Now remove from the Tawa and place it on rolling board and again roll it. 

10. Roll it again to make a 5-6 inch circle and prick it using fork all over.

11. place it again on Tawa, cook it on both the sides on medium flame adding little  oil or ghee on both the sides until brown spots appear on both the sides.

12. Repeat for remaining dough.

Now it is ready to eat. serve Hot with Fresh curd, pickle, chutney, Pappad or a cup of masala chai. You can serve it for breakfast, lunch, or dinner. I personally like to eat Koki Bread for breakfast.

Note:
Koki dough must be made fresh and You can fry Koki in ghee as well.
