Patra or Alu vadi or Pathrode Recipe

Alu vadi also known as Patra. it is stuffed rolled colocasia leaves snack that is popular in both Maharashtrian and Gujarati cuisine. In Hindi, these leaves are called as Arbi ke patte. in marathi, colocasia leaves are known as Alu or aloo.



Ingredients

  • Gram flour
  • Haldi/ turmeric powder
  • Dana / coriander powder
  • jeera/ cumin Powder
  • Kashmiri red mirch powder
  • Salt as per requirement
  • Water
  • Tal/seasam seeds unroasted
  • Ginger & green chili paste
  • Tamron/ kokum & Jaggery pulp (making by soaking in water for few hours)
  • Coconut powder for Garnishing
  • Finely chopped coriander Leaves for Garnishing
  • Colocasia Leaves/taro root leaves/Arbi ke patte

How To make

1.For Making the mixture first take a bowl and Add gram flour, all Spices, ginger Green chili paste, Jaggery (soaked)& Tamron (soaked) pulp, salt, seasam seeds.

2.Bring all of this together, start adding water just a little at a time.

3.make sure that the consistency of this mixture like to be spread 

4. these leaves need to be arranged as per their sizes

5. Now make the collection of roll By applying Mixture. there are two sides of leaf first side is glossy & other side is matte.

6. .need to make the glossy side downwards so that we can apply mixture on matte side.

7.now take a little bit of mixture & start applying on it one by one properly on bundles of leaves similar way, Stacked upon each other.

8.now start collection of roll. start from the bottom. Fold it like envelope & apply mixture on it becomes like a glue.

9.They are then rolled and steamed. The steamed rolls are then tempered or fried.

10. You can make these rolls a day before and then temper or fry them the next day. I prefer the tempered ones. However you can also deep fry or shallow fry the rolls.

Now its ready to serve. Garnish with Coriander leaves & coconut powder. Serve it With Green Chutney.
