Rajma ke Kebab Recipe

Rajma or Kidney beans is a good source of potassium. It contains good fiber content which cuts down on the bad cholesterol levels helps in weight loss. Rajma ke kebab is a very Healthy dish & yummy at the same time for every age of person.


Ingredients

  • 1 cup rajma (kidney beans) pressure cooked or boiled & mashed
  • 2 medium potato pressure cooked or boiled & mashed
  • 1 small sized onion, grated
  • 1 green chilli finely chopped
  • 1 teaspoon ginger garlic paste 
  • 1/4 teaspoon turmeric powder (haldi)
  • 1/2 teaspoon kashmiri or red chilli powder (lal mirch powder)
  • 1/4 teaspoon garam masala
  • 1/2 teaspoon amchur powder (dry mango powder) - add as per taste
  • 6-7 Tbsp breadcrumbs
  • 2-3 Tbsp chopped coriander leaves
  • Asafoetida or hing, a pinch
  • Oil for roasting and pan frying
  • salt as required

Note:

You can Swap ghee or oil with olive oil to make them  healthier.

How to Make 

1. Soak Rajma or kidney beans overnight in water and pressure cook them with a little salt in water for 3-4 whistles & then mashed well. Keep aside.

2. Then pressure cook potatoes with a little salt in water for 3-4 whistles. Then mashed well and keep aside.

3. In a pan add 2 Tbsp oil and a pinch of hing. Add garlic and ginger paste. Once it browns a little, add onions and sauté or cook till light golden brown.

4. Add kashmiri or Red chilli Powder, turmeric powder, garam masala, green chilli Finely chopped, lemon juice or aamchur powder and salt.

5. Once the masala starts to leave sides add mashed Rajmas & Potatoes. Cook for 5 minutes. Stir continuously till the masala leaves the pan from all sides. Let the masala cool for a while.

6. Once cooled, add 2 Tbsp breadcrumbs to it. 

7. Then shape into small or medium sized balls first and then flatten them.

8. Roll the kebabs in breadcrumbs to form a Crispy.  

9. Keep them in the freezer for 10 minutes.

10. On a non stick pan add ghee/ oil/olive oil and place the kebabs. Pan fry them from all sides till evenly cooked, golden and crisp.

11. Remove the rajma kebab in a plate or tray.

Now is ready to eat. Serve it hot with Green chutney or Ketchup.
